Beef Stew With Pineapple and Olive

Marinate Beef With Soy sauce, Crushed Black Pepper and Pineapple for about 1 to 2 hours before cooking.

Marinate beef for 1 to 2 hours. I add pineapple for my marinade beçause it contain enzymes that have a tenderizing effect on meat. The enzyme found in pineapple, it’s so effective that it will turn your meat into mush if you let it marinate too long.

Then sauté garlic and onion in a cup of unsalted butter. Add chopped celery and Tomato Paste and stir for 3 minutes. Add pimiento and marinated beef with marinade and cook for 10 minutes. Add beef broth . Cover and simmer for 1 hour and 50 minutes or pressure cook for 30 minutes .Add pickles and whole green olive. Cook for another 15 minutes (ordinary cooking). Add  Pineapple Chunks with syrup & bell pepper. Season with salt & pepper. Simmer until thick . Serve hot . Enjoy your meal!
