Creamy Farfalle With Fresh Mushroom, Parmesan Cheese and Herbs

Farfalle are a type of pasta. Commonly known as “bow-tie pasta”, the name is derived from the Italian word farfalla(butterfly). The “e” at the end of the word is the Italian feminine plural ending, making the meaning of the word “butterflies”.

Bring a large pan of salted water to the boil, add the farfalle, and cook according to the packet instructions. Sautè the onion, tomatoe and mushroom with olive oil in a second pan and cook until done. Add the Parmesan Cheese and Heavy Cream.

When the farfalle is  cooked, drain in a colander, saving a little of the cooking water. Add the pasta to the sauce and stir in most of the mint, finely sliced – if the pan isn’t big enough, mix it all together in a large warmed bowl.Season with salt and pepper. Add little sugar if you want. Serve hot as soon as possible  Enjoy!
